Aji – ah – hot!
Pronounced (ah-hee), this awesome hot pepper sauce comes from the Aji Amarillo yellow chili pepper, found in Peru. The uniqueness of this pepper allows its tasty sweetness to be experienced before its residual spice emerges from the back of the throat with a scratchy burn that is sensual and addictive. In Peru, Aji is traditionally eaten on grilled meats and potatoes.
- Try it on as a salsa with salty corn tortilla chips.
- Add to soups and stews for a sweet kick.
- Blend with sour cream or plain yogurt for a creamy accompaniment to crab cakes, salmon or your favorite grilled fish.

Recipe idea:
- 1-2 lbs jumbo shrimp, pealed with tail on
- 1 container of Savory Grill Sauce
Marinade shrimp in Savory Grill Sauce for just 10 minutes (any longer and the limejuice will begin to cook the shrimp). Reserve some marinade for basting. Lay shrimp on hot grill and sear for 2-3 minutes on each side. Be sure to baste before turning to lock in juices. Eat and enjoy. |
